It’s a new (green) day for chef-restaurateur Joey Giannuzzi, who’s teamed up with local real estate developer Mitchell Robbins to open Farmer’s Table (1901 N. Military Trail, 561/417-5836) in the old Rosso Italia space next to Red Steakhouse in Boca Raton.

A continuation of the health and environmentally conscious philosophy that drove Giannuzzi’s Green Gourmet to-go outlet and café (which, btw, is now closed), Farmer’s promises food based on “fresh, seasonal ingredients in their purest form, devoid of excess fat, salt, processing, toxins and all the other extras you don’t want.” Also offered are menus for kids, vegetarians, the gluten-adverse and other restricted diners.

The 200-seat restaurant will feature sustainable fish, grass-fed meats, produce from local purveyors and specialty cocktails. It will be open for breakfast, lunch and dinner, and offer take-out options and catering services.

On the menu are choices from Jackman Ranch beef burgers to Korean-style wings, edamame-shrimp dumplings to cauliflower and brie flatbreads, zahtar-spiced salmon to vegetarian lasagna, and wood-fired apple crisp to vegan “gelato.”

It’s a diverse and interesting selection, and if anyone can make it work, Giannuzzi can. The biggest hurdle is the location, which is surprisingly convenient and easy to get to but also obscure. How it all plays out. . . we’ll just have to wait and see.
