Bringing his patented “farm to fork” philosophy to Mexican street food, Dennis Max and partners Mitch Kaminsky and Fred Stampone will any day now open The Mexican in Boca’s Royal Palm Place.
Max’s eatery is a big ‘un—some 4,000 square feet—done by Manhas Design of Fort Lauderdale. With half an old VW bus protruding into the dining room and a giant graffiti mural on two walls, it ups the design ante on restaurants like Cabo Flats (coming soon to Delray Beach) and Rocco’s Tacos.
Long-time Max Group toque Scott Pierce will be executive chef, turning out dishes like shrimp, chicken and pork belly tacos; roasted mushroom and caramelized onion enchiladas; salmon molé verde; and pescado Veracruzana. Also on the menu: baby back ribs, fajitas and a roster of small plates, salads and desserts. A lot of the ingredients will come from local sources, like Swank Farms and Heritage Hens.
