Lavender-Infused Crème Brûlée
Makes 4 servings
6 egg yolks
3.5 oz white sugar + 4 teaspoons for caramelized topping
12 fl oz heavy cream
5 fl oz whole milk
1 teaspoon food grade dried lavender flowers
Step 1: Pre-heat oven to 325º. In a saucepan, combine cream, milk & dried lavender flowers. Cook over low heat just until hot (do not let it boil). Take away from the heat & infuse the preparation for 3-5 minutes. Strain the dried lavender flowers.
Step 2: In a bowl, beat egg yolks & sugar until the sugar is dissolved. Slowly poor the cream & milk mixture over while stirring softly (do not whip).
Step 3:Divide the preparation in low rim ramequins. Place the ramequins in a baking dish. Fill the dish with boiling water half the way to the ramequins rim. Bake in oven for 30 to 40 minutes or until the center of the custard is barely set.Refrigerate for several hours.
Step 4:Right before serving, top each custard w/ about a teaspoon of sugar in a thin layer and caramelize the sugar to a light brown with a torch.
