North county is becoming something of a hotbed of raw, vegan and vegetarian cuisine with the debut of Christopher’s Kitchen (4783 PGA Blvd., 561/318-6193), a stylish new restaurant that slipped into the Palm Beach Gardens space formerly home to Pizza Fusion.
Chef-owner Christopher Slawson made his raw food-vegan culinary bones in Santa Monica before moving to South Florida eight months ago and putting his specialty to work as a private chef. It proved so popular decided to expand his customer base by opening a restaurant, taking over the shuttered pizzeria and giving it a more contemporary look to go along with its upscale raw-vegan menu.
On that menu are dishes like a “sushi” roll of jicama, rice, avocado, mango, kale chips and ginger; zucchini and tomato “lasagna” with macadamia nut “cheese” and basil pesto; a mock Nicoise tuna salad with onion flatbread, tomato, asparagus, dill pickles, avocado and lemon; and banana cream tart with walnut-graham cracker crust, sliced bananas and chocolate sauce.
Slawson also has his own line of prepared foods that he sells at the restaurant, which is open for lunch and dinner daily. A beer and wine license is on the way but isn’t in place yet.
