With Cinco de Mayo coming up next week, we bring you some recipes for enchiladas – simple to make and oh, so good to eat. Next week, a list of spots having specials for that holiday.
Supreme chicken enchilada

Makes 6 servings
8 oz. cream cheese spread
3 tbsp. milk, divided
1 tsp garlic powder
2 tsp. oil
1 cup each: green peppers, onions
2 cloves garlic, minced
2 ½ cups chopped, cooked chicken
1 ½ cups Mexican style shredded four cheese, divided
2 cans (10 oz. each) red enchilada sauce, divided
12 corn tortillas, 6-inch, warmed
Heat oven to 350 degrees. Mix cream cheese, 2 tbsp. milk and garlic powder until blended. Heat oil in large skillet on medium heat. Add peppers, onions, garlic, cook 5-6 minutes or until crisp-tender. Stir in chicken, ¾ cup each of cream cheese mixture and shredded cheese and ¼ cup enchilada sauce.
Dip 1 tortilla in remaining enchilada sauce, shake off excess sauce. Spoon ¼ cup chicken mixture down center, roll up. Place seam side down, in 13-by-9-inch baking dish sprayed with cooking spray. Repeat with remaining tortillas. Cover with remaining sauce.
Bake 20 minutes. Top with remaining shredded cheese, bake another 5 minutes. Mix remaining cream cheese mixture and milk, spoon over enchiladas.
Note: These can be assembled and refrigerated up to 24 hours ahead of time. To serve, bake enchiladas uncovered as directed. Increase baking time if needed until enchiladas are heated through.
