Canyon is thrilled to launch its wine pairing dinner series with the first event of the season, the  Orin Swift Wine Dinner. Join us for a once-in-a-lifetime collaboration between Chef Aaron Anderson and legendary winemaker Dave Phinney. Each dish in this five-course tasting menu was designed to take you on a culinary journey to delight the senses. Each course is thoughtfully paired with an Orin Swift wine.   Dishes include:  

• Roasted Shishitos with kimchi garlic glaze. Paired with La Marca Prosecco 

• Salmon and Tuna Tartare with spicy sesame soy, avocado, wasabi cream, and yucca chips. Paired with Orin Swift Mannequin Chardonnay 
• Chorizo and Shrimp Tavioli Uovo with poblano pesto cream sauce, lemon zest, and cilantro. Paired with Orin Swift Slander Pinot Noir 
• Masala Dusted Venison with blueberry serrano reduction and pickled red onions. Paired with Orin Swift 8 Years in the Desert  
• Canyon White Chocolate bread pudding. Paired with Orin Swift Palermo Cabernet Sauvignon
