Grimaldi’s Pizzeria to Debut in West Palm Beach

A slice of the Big Apple is coming to Clematis Street with the expected fall debut of Grimaldi’s Pizzeria, the third South Florida location for the famed New York pizzeria, which traces its coal-fired brick oven pie-making history back to 1905.

This latest Grimaldi’s takes over the long-vacant spot once home to Fire Rock Pizza, which just couldn’t make a go of it despite a sleekly stylish dining room, stellar views of the Intracoastal and decent-enough pies.

Like many of the designer pizzerias that have hit the market these days, Grimaldi’s pies are all about the ovens, hand-built behemoths that weigh  25 tons and go through 100 pounds of coal a day to keep up a constant temperature of 1,200 degrees.

Into them go pizzas in three sizes, with a choice of three different sauces (tomato, white with garlic and pesto). Toppings are fairly traditional, ranging from artichoke hearts and anchovies to meatballs and kalamata olives. There’s also a small selection of starters, salads and desserts, as well as beer and wine.
