From the skeleton of the old Blue Fish rises Prime Delray (110 E. Atlantic Ave., 561-865-5846), a chic new Delray Beach eatery featuring steak, seafood and sushi that seeks to channel the cachet and glamour of 1940’s supper clubs.
Owner Steven Pellegrino, who also owns Il Bacio just down the block, had the former Blue Fish space gutted and swanked up with crystal chandeliers, marble floors and hand-painted murals. There’s also a 600-bottle wine room, lounge and private dining rooms, and a glass-faced room where Prime’s beef (all USDA Prime) is cut to order.
Those steaks come in several different cuts, which can be customized with the addition of one of a half-dozen sauces, from brandy peppercorn and bearnaise to exotic mushroom glace and chimichurri. Other dishes by top toque Peter Masiello house-smoked Scottish salmon, heirloom tomato and basil salad, Maryland-style crabcakes and fries, rock shrimp “scampi”-crusted halibut, veal Milanese and a selection of sushi rolls.
Prime is open for lunch and dinner daily.
