When Chef Daniel Boulud calls his friends together to toss out some dishes, you end up with a meal of many colors. That’s what happened Sunday at the Brazilian Court setting for this walk-around tasting and Palm Beach Food & Wine Festival event.
There’s the gray, pearl and seaweed hues of the raw Rappahannock oysters, with a lot of different sauces to try. Chef Elizabeth Falkner’s station had her biscuits with pepper jam (those could make an entire meal for me!), plus a collard greens salad with maple browned butter-lemon vinaigrette.
Chef Stephen Stryjewski served eggs Sardou, with artichoke heart, creamed spinach and Hollandaise sauce. Chefs Mike Lata and Jason Stanhope worked magic and handed out soft-scrambled egg tartine, white truffles, beet-cured steelhead trout and horseradish yeasted buckwheat blinis.
Desserts included caramel and raspberry panna cottas, tarts (pictured), all flavors of pastries and tall Christmas cookie trees. I think that may be what I’d like under my tree this year!
The chefs were busy serving morsels, but also took time to speak with fans, and pose for photos, as did Chef Boulud. It was a melding of many flavors, a tasty affair.
