You know the whole farm-to-table, organic, local, sustainable thing is going mainstream when it comes to hotel chains like Embassy Suites. Case in point:Verdea Restaurant & Wine Bar (4350 PGA Blvd., 561/691-3130) at the Embassy Suites in Palm Beach Gardens.
Locally sourced, environmentally friendly and sustainable products are said to be part of the new eatery’s DNA, along with a wine bar that offers some 250 bottles from around the world. Chef is James King, who comes to the restaurant from stints on the West Coast and locally at The Breakers and Four Seasons Palm Beach.
On King’s menu are dishes like diver scallops cooked ‘a la plancha” (on a flat-top grill) with fennel chutney and fennel pollen; Carolina stone bass with mussels, spiny lobster, bay scallops and andouille; pan-roasted pheasant with house-made sausage and truffle essence; and Mishima Ranch Wagyu filet with sauce barnaise.
The overall look of the place is posh, clubby and certainly inviting; I’d love to see it replicated throughout the hotel chain.
