Verdea Gets New Chef, New Menu

Verdea Restaurant & Wine Bar (4350 PGA Blvd., 561/691-3130) is ringing out 2011 with a new chef and a new menu.

Original chef James King left the acclaimed Palm Beach Gardens restaurant earlier this year, heading to Miami to open Edge Steak & Bar on Brickell Avenue. Taking over the kitchen now is David Welch, whose “contemporary and tropical” cuisine has been honed in the kitchens of such well-known local restaurants as Smith & Wollensky, Tantra and Acqualina.

To tease Welch’s new menu, Verdea is offering a three-course, $50 prix fixe dinner (plus a glass of wine from it’s extensive cellar) every Tuesday and Wednesday through the end of the year.

Among the new offerings are smoked shellfish bisque with shaved fennel slaw and lump crab flan; root vegetable-crusted black grouper with fried yucca, cilantro, piquillo pepper and mango gastrique; and pumpkin panna cotta with chocolate-dipped pepitas biscotti.
