Celebrate World Vegan Month With a Great Meal

The beautiful photo of Massaman Curry (above) should make you want to dig into this vegan dish at The Cooper in Palm Beach Gardens – just because it looks fabulous. The fact that November is World Vegan Month is a bonus. Try something that looks wonderful, tastes amazing and is good for you. You can’t lose!

The curry shown ($19) is Thai based, with grilled tofu, coconut milk-based sauce with lotus root, green beans, eggplant, scallions, calabaza and cashews over basmati rice.

Remember to keep experimenting with new tastes and new places. Here’s a prime time to do both.
