Proper Ice Cream is not your average ice cream shop.
In fact, this ice cream is hardly proper with flavors ranging from Blueberry Muffin and Glazed Donut to Black Sesame and Fresh Ginger.
Owner Rick Felberbaum worked as a lawyer for 30 years before realizing his passion was creating ice cream. While he is still a practicing lawyer, he is also a frozen dessert connoisseur serving fresh ice cream at Joseph’s Classic Market and top restaurants such as Buccan in Palm Beach and 1000 North in Jupiter. Proper Ice Cream opened its first retail location on May 31 in Delray Beach.
If you really have a sweet tooth try the Peach Cobbler: Sweet Cream and Peach ice cream sandwiched between a freshly baked cobbler biscuit. For those ice cream lovers who prefer to stick to more traditional flavors, don’t fret. Proper Ice Cream also serves the classics: chocolate, vanilla, and strawberry. Felberbaum recommends the hot ice cream sandwich, made with your choice of ice cream placed between two warm, freshly baked slices of pound cake.
The difference between this ice cream and a pint you could find at the store is that it is made without any artificial ingredients. The ice cream is created from scratch, with fruits and spices coming from Turkey, Israel, Yugoslavia and local Florida farms.
“It’s truly a gourmet top-of-the-line product,” Felberbaum said.
Don’t forget to add one of Proper Ice Cream’s homemade toppings such as orange caramel, chocolate fudge and cinnamon whipped cream. Proper Ice Cream also serves a variety of colorful cones from The Konery, including black vanilla, green matcha and blue corn, making for an Instagram-worthy ice cream picture.
At night, the shop comes alive with occasional live music performances. Graffiti covers the walls giving it a hip, youthful feel and tables are set up outside for those who want to eat their cold dessert in the Florida heat.
